Weeknight Veggie Chilli

Built almost entirely from tins, so there's a good chance you already have most of this in. It freezes in portions well, and honestly tastes better the next day once the spices have had time to sit — worth doubling the batch on purpose.

Ingredients

  • 2 tbsp olive oil
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 red pepper, diced
  • 1 carrot, diced
  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chilli powder (adjust to taste)
  • 1 x 400g tin chopped tomatoes
  • 1 x 400g tin black beans, drained
  • 1 x 400g tin kidney beans, drained
  • 200ml vegetable stock
  • 1 tbsp tomato puree
  • Salt and pepper, to taste
  • Rice, soured cream, or grated cheese, to serve

Method

  1. Heat the oil in a large pot over medium heat. Add the onion and cook for 5 minutes until soft.
  2. Add the garlic, red pepper, and carrot, and cook for another 5 minutes.
  3. Stir in the cumin, smoked paprika, and chilli powder, and cook for 1 minute until fragrant.
  4. Add the chopped tomatoes, both tins of beans, stock, and tomato puree. Stir well.
  5. Bring to a simmer, then partially cover and cook for 20-25 minutes, stirring occasionally, until thickened.
  6. Season to taste and serve with rice, soured cream, or grated cheese.

Tip: Mash a few spoonfuls of the beans against the side of the pot near the end — it thickens the chilli without needing to reduce it for longer.
