The kind of dinner that feels like more effort than it is: one tray, one wash-up, and salmon
that comes out flaky and buttery every time. Good for a weeknight, easy to scale up for more
people by adding another tray.
Ingredients
- 2 salmon fillets
- 1 bunch asparagus, woody ends trimmed
- 2 tbsp butter, melted
- 2 garlic cloves, minced
- 1 lemon, half juiced and half sliced
- 1 tbsp olive oil
- 1/2 tsp chilli flakes (optional)
- Salt and pepper, to taste
- Fresh parsley, chopped, to serve
Method
- Preheat the oven to 200C (400F). Line a baking tray with foil or baking paper.
- Toss the asparagus with the olive oil, salt, and pepper, and spread over one side of the tray.
- Mix the melted butter, garlic, and lemon juice together. Place the salmon fillets on the other side of the tray and brush generously with the garlic butter.
- Season the salmon and scatter over the chilli flakes if using. Top with a couple of lemon slices.
- Roast for 12-15 minutes, until the salmon flakes easily and the asparagus is tender.
- Scatter with fresh parsley and serve straight from the tray.

Tip: Salmon is done when it flakes easily with a fork but still looks slightly translucent in the very centre — it'll finish cooking as it rests.
